Xanthan gum description

Xanthan gum is a natural, high molecular weight biopolymer produced by fermenting glucose, sucrose, or lactose with the bacterium Xanthomonas campestris. Xanthan gum is also used in cosmetic and personal care products as a thickener, emulsifier and stabilizer. It can help to improve the texture and cossistency of lotions, creams, and gels, and prevent them from separating over time. Source in the fermentation broth are wheat & surgar beet, etc.

Xanthan gum properties

1) Xanthan gum forms a clear solution in aqueous phase.

2) High viscosity efficient thickener

Xanthan gum is highly soluble in water, and its unique molecular structure allows it to form a thick, viscous solution even at low concentrations. This makes it a popular thickening and stabilizing agent in the food, pharmaceutical, and personal care industries.

3) Unique Pseudoplastic characteristic, high shear-thining stability

Xanthan gum exhibits pseudoplastic behavior, which means that it thins out when subjected to shear stress, such as when it is poured or mixed. This property makes it ideal for use in products that require easy flow or spreadability, such as sauces, creams, and lotions.

4) Effective suspending additive, even at low concentration

Xanthan gum is an effective suspending additive, even at low concentrations. Its ability to suspend particles in a liquid is due to its high viscosity and pseudoplastic behavior. Xanthan gum has a unique molecular structure that allows it to form a three-dimensional network in water, creating a thick, viscous solution. When solid particles are added to the solution, the xanthan gum molecules form a coating around them, preventing them from settling to the bottom of the liquid.

5) Synergistic with other hydrocolloids

Xanthan gum can be used in combination with other hydrocolloids, such as guar gum, to create more stable gels and emulsions. This allows manufacturers to create products with unique textures and characteristics.

6) Stable and broad PH, both stable in alkaline and acid conditions  and Thermal stability, stable to temperature stability

Xanthan gum is resistant to high temparatures and a wide range of pH levels, which make it usesful in a variety of applications. It can be used in products that are heated or subjected to acidic or alkaline conditions without losing its thickening or stabilizaing properties.

7) High tolerance to all kinds of brine/salts, even in high concentration

The tolerance of xanthan gum to salts and brines is due to its ability to bind to cations, such as sodium, calcium, and magnesium, which are present in high concentrations in brine solutions. The xanthan gum molecules create a protective coating around the cations, preventing them from interacting with other particles and causing destabilization.

8) Biodegradable and non-toxic

Xanthan gum is a natural polymer that is biodegradable and non-toxic, making it a safe and environmentally friendly ingredient for use in food, pharmaceutical, and personal care products.
